Rethink's Pink Grapefruit and Avocado Salad

In continuing with Rethink’s mission to educate women on the ways to reduce their risk of breast cancer, we will be sharing some of our all-time favorite healthy recipes with you.

2 pink grapefruit
half a small head of radicchio
3 avocados
3 tbsp olive oil
sea salt and black pepper
3 tbsp snipped chives
1 scant tbsp balsamic vinegar

Peel the grapefruit then, working over a bowl, separate them into segments, discarding all the pith and membranes and reserving any juice for another use. Trim and finely slice the radicchio, discarding the tough white parts.

Just before serving, quarter and de-stone the avocados. Peel and slice the quarters in half lengthwise. Combine the avocado and grapefruit in a large bowl. Drizzle over the oil, season and gently toss. Fold in the radicchio and the chives. Alternatively, arrange the salad ingredients on plates and drizzle around a few drops of balsamic vinegar (as pictured).
