In continuing with Rethink’s mission to educate women on the ways to reduce their risk of breast cancer, we will be sharing some of our all-time favorite healthy recipes with you.
Continuing on our watermelon kick, this is a super easy and delicious salad to whip up for a light lunch or a beautiful accompaniment for an outdoor evening of summer entertaining. Its light and fresh ingredients are common grocery items and what this salad lacks in calories, it more than makes up for in taste and simplicity.
1 cup crumbled feta cheese
½ medium red onion, thinly sliced
¼ cup chopped fresh basil
¼ cup extra virgin olive oil
2 tablespoons balsamic vinegar
½ teaspoon freshly ground pepper
½ teaspoon salt
In a large bowl, gently toss together all ingredients. Serve chilled or at room temperature. Serves 4-6.
